On Saturday, February 20, 2021, the Hinamatsuri Cooking Workshop was held remotely. The instructor was Chef Andy Matsuda, a founder of the Sushi Chef Institute, who was appointed the Japanese Cuisine Special Goodwill Ambassador by the Ministry of Agriculture, Forestry and Fisheries of Japan in 2019. Twenty people attended this event session via Zoom.
We made Hina chirashi sushi, Clear soup with hamaguri clam, and diamond shaped sushi. Because Chef. Matsuda would like to pass on the Japanese culture to the next generation, so he explained why we used the ingredients for the Hinamatsuri (Girls’ Day), which shows parents hope for their girls’ happiness. He also showed the tips for making dashi soup stock and decoration including the knot of mitsuda, three leaved Japanese wild parsley, and pine needle shaped lemon, which are both auspicious in Japan.
Everybody was satisfied and happy. CoA Robinson closed this event with gratitude to the Chef Matsuda and the participants.
